WELLKHANA KITCHEN RECIPE
Ingredients:
- 2 large Portobello mushroom caps, cleaned and stems removed 
- 2 tablespoons olive oil 
- 1 tablespoon tamari (or gluten-free soy sauce) 
- 1 teaspoon balsamic vinegar 
- 2 large handfuls of fresh spinach 
- 1 ripe avocado, sliced 
- 4 gluten-free wraps or tortillas 
- 1/4 cup hummus (optional) 
- Salt and pepper to taste 
- Fresh lemon juice (optional) 
Instructions:
- Marinate the Mushrooms | In a small bowl, combine olive oil, tamari, and balsamic vinegar. Brush the portobello mushrooms with the marinade and let them sit for 10-15 minutes. 
- Grill the Mushrooms | Preheat a grill or grill pan over medium heat. Grill the marinated portobello mushrooms for about 4-5 minutes per side, or until tender and slightly charred. 
- Prepare the Wrap | Lay the gluten-free wraps on a flat surface. If you like, spread a thin layer of hummus on each wrap for added flavor and creaminess. 
- Assemble the Wrap | Place a handful of fresh spinach on each wrap, followed by grilled portobello mushrooms and sliced avocado. Season with salt and pepper, and squeeze fresh lemon juice on top, if desired. 
- Wrap and Serve | Fold the sides of the wrap inward and roll tightly. Slice in half and serve immediately.
