WELLKHANA KITCHEN RECIPE
Ingredients:
2 medium sweet potatoes, peeled and cubed
1 cup peanut butter (preferably unsweetened and natural)
1 can (14 oz) coconut milk
1 tablespoon extra virgin olive oil
1 tablespoon fresh ginger, grated
2 garlic cloves, minced
1 teaspoon turmeric powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder (optional for heat)
1 1/2 cups vegetable broth (or water)
Sea salt and black pepper, to taste
1 tablespoon fresh cilantro, chopped (for garnish)
1 tablespoon roasted peanuts, chopped (for garnish)
Instructions:
Prepare | In a large pot, heat the olive oil over medium heat. Add the minced garlic and grated ginger and sauté for 1–2 minutes, until fragrant.
Add Spices | Add turmeric, cumin, coriander, paprika, and chili powder (if using). Stir and cook for 30 seconds to release the flavors.
Add Sweet Potatoes | Add the cubed sweet potatoes to the pot and stir to coat in the spices. Cook for 3–4 minutes.
Simmer | Pour in the vegetable broth and bring to a simmer. Cover and cook for 10–15 minutes until the sweet potatoes are tender.
Add Peanut Butter & Coconut Milk | Stir in the peanut butter and coconut milk, mixing until the peanut butter is fully incorporated. Cook for another 5 minutes until heated through and the sauce is creamy.
Season | Season with salt and pepper to taste.
Serve | Spoon the curry into bowls, garnish with chopped cilantro and roasted peanuts, and serve with steamed rice or quinoa. Enjoy!
