NUTRITIONAL YEAST | VEGAN B-COMPLEX POWERHOUSE

LEMON ZEST | ANTIOXIDANT & DIGESTIVE AID
Lemon zest is a natural detoxifier rich in vitamin C and polyphenols that protect against oxidative stress. Its bright citrus oils enhance digestion, uplift mood, and bring a refreshing finish to this dish.
EXTRA VIRGIN OLIVE OIL | HEART & LONGEVITY ESSENTIAL
A cornerstone of the Mediterranean diet, olive oil provides anti-inflammatory monounsaturated fats and polyphenols that protect your cells, support brain health, and promote radiant skin from the inside out.
WELLKHANA KITCHEN RECIPE
Ingredients:
1 cup arborio rice (or short-grain brown rice for added fiber)
1 tablespoon extra virgin olive oil
1 small shallot, finely chopped
2 cloves garlic, minced
1 ½ cups green peas (fresh or frozen, thawed)
1 tablespoon miso paste (white or chickpea)
4 cups warm vegetable broth (unsalted or low sodium)
2 tablespoons nutritional yeast
1 tablespoon lemon juice
Zest of 1 organic lemon
Sea salt and black pepper to taste
Optional: 1 tablespoon vegan butter or coconut cream for extra creaminess
Fresh mint or microgreens for garnish
Instructions:
Sauté the Aromatics | In a medium saucepan, heat olive oil over medium heat. Add the shallot and garlic, sautéing for 2–3 minutes until fragrant and translucent.
Toast the Rice | Add arborio rice and stir for 1–2 minutes, coating each grain in oil. This step builds a nutty base and enhances creaminess.
Add the Broth | Gradually ladle in the warm vegetable broth, one cup at a time, stirring frequently. Allow the rice to absorb each addition before adding more. Continue until the rice is creamy and tender (about 20–25 minutes).
Blend the Peas | Meanwhile, blend 1 cup of peas with miso paste, lemon juice, and a splash of water until smooth. This vibrant green puree adds protein and silkiness to the risotto.
Combine & Season | Stir the pea puree into the risotto, then add the remaining whole peas, nutritional yeast, lemon zest, and optional vegan butter or coconut cream. Season with sea salt and black pepper to taste.
Serve & Garnish | Spoon into bowls and top with fresh mint or microgreens. Add an extra drizzle of olive oil and sprinkle of lemon zest for a bright, elegant finish.
Optional Garnishes:
Fresh mint, basil, or pea shoots
Lemon zest curls
Hemp seeds or toasted pine nuts for crunch
A light drizzle of truffle oil for a gourmet touch
