Ingredients:
1 cup millet
2 tablespoons olive oil
1/2 onion, chopped
3 cloves garlic, minced
1 1/2 cups mixed mushrooms (shiitake, cremini, or button), sliced
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
1/4 cup fresh parsley, chopped
2 1/2 cups vegetable broth
Salt and pepper, to taste
Instructions:
Prepare | In a medium saucepan, heat olive oil over medium heat. Add chopped onion and garlic, sautéing for 2-3 minutes until soft and fragrant.
Combine | Add the sliced mushrooms, thyme, and rosemary to the pan, stirring for 5-7 minutes until the mushrooms release their moisture and become tender.
Cook Millet | Add the millet to the pan, stirring to combine with the mushroom mixture. Pour in the vegetable broth, season with salt and pepper, and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20 minutes, or until the millet is tender and the broth is absorbed.
