  • 1/2 cup shredded carrots

  • 1/2 cup diced celery

  • 1 tablespoon tamari or gluten-free soy sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon dried sage

  • 1/2 teaspoon smoked paprika

  • Salt and pepper to taste

  • 2 tablespoons ground flaxseeds mixed with 5 tablespoons water (flax egg)

  • 1/2 cup gluten-free oats

  • 1/4 cup oat flour (or almond flour)

Instructions:

  1. Prepare the Flax Egg | In a small bowl, mix the ground flaxseeds with water. Let sit for 5–10 minutes to thicken.

  2. Sauté the Vegetables | Heat olive oil in a skillet over medium heat. Add onions and garlic, cooking until fragrant. Stir in mushrooms, carrots, and celery, and cook until softened and most of the moisture has evaporated.

  3. Combine Ingredients | In a large bowl, mix the sautéed vegetables with walnuts, oats, oat flour, tamari, thyme, sage, smoked paprika, salt, and pepper. Add the flax egg and stir until combined.

  4. Form the Loaf | Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper. Press the mixture firmly into the pan, smoothing the top.

  5. Bake | Bake for 40–45 minutes or until firm and golden brown on top. Let cool slightly before slicing.

  6. Serve | Garnish with fresh herbs and serve with vegan gravy, cranberry sauce, or a side of roasted vegetables.
