WELLKHANA KITCHEN RECIPE
Ingredients:
1 tablespoon olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
2 cups mushrooms, finely chopped
1 cup walnuts, finely chopped
1/2 cup shredded carrots
1/2 cup diced celery
1 tablespoon tamari or gluten-free soy sauce
1 teaspoon dried thyme
1 teaspoon dried sage
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons ground flaxseeds mixed with 5 tablespoons water (flax egg)
1/2 cup gluten-free oats
1/4 cup oat flour (or almond flour)
Instructions:
Prepare the Flax Egg | In a small bowl, mix the ground flaxseeds with water. Let sit for 5–10 minutes to thicken.
Sauté the Vegetables | Heat olive oil in a skillet over medium heat. Add onions and garlic, cooking until fragrant. Stir in mushrooms, carrots, and celery, and cook until softened and most of the moisture has evaporated.
Combine Ingredients | In a large bowl, mix the sautéed vegetables with walnuts, oats, oat flour, tamari, thyme, sage, smoked paprika, salt, and pepper. Add the flax egg and stir until combined.
Form the Loaf | Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper. Press the mixture firmly into the pan, smoothing the top.
Bake | Bake for 40–45 minutes or until firm and golden brown on top. Let cool slightly before slicing.
Serve | Garnish with fresh herbs and serve with vegan gravy, cranberry sauce, or a side of roasted vegetables.
