WELLKHANA KITCHEN RECIPE
Ingredients:
2 tablespoons sesame oil
1 small onion, sliced
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
2 cups shiitake mushrooms, stems removed, sliced
1 cup snow peas, trimmed
1 red bell pepper, thinly sliced
3 tablespoons tamari
1 tablespoon rice vinegar
1 teaspoon maple syrup
1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
1 tablespoon sesame seeds (plus extra for garnish)
Cooked brown rice or quinoa, for serving
Instructions:
Prepare the sauce | In a small bowl, whisk together tamari, rice vinegar, maple syrup, and the cornstarch mixture (if using). Set aside.
Sauté aromatics | Heat sesame oil in a large skillet or wok over medium heat. Add the onion, garlic, and ginger, and sauté for 2-3 minutes until fragrant.
Cook the vegetables | Add shiitake mushrooms to the skillet and cook for 4-5 minutes until they release their moisture and begin to brown. Stir in the snow peas and red bell pepper, cooking for another 2-3 minutes until tender-crisp.
Add the sauce | Pour the tamari sauce over the vegetables, stirring well to coat. Allow the sauce to simmer for 1-2 minutes, thickening slightly if cornstarch is used.
Finish and serve | Sprinkle sesame seeds over the stir fry. Serve warm over a bed of brown rice or quinoa, garnished with extra sesame seeds and fresh herbs if desired.
