1 cup sprouted lentils
1/2 cucumber, diced

1 tablespoon olive oil
Juice of 1 lemon
Juice of 1 orange
1 teaspoon apple cider vinegar
1/2 teaspoon ground cumin
Salt and pepper, to taste
Instructions:
Prepare Lentils | Rinse the sprouted lentils under cold water. In a medium saucepan, bring 3 cups of water to a boil. Add the lentils and cook for 10-12 minutes or until tender. Drain and set aside to cool.
Prepare Veggies | While the lentils are cooking, dice the cucumber, bell pepper, avocado, and slice the red onion.
