1/2 teaspoon paprika
1 can (15 oz) chickpeas, drained and rinsed
1 can (14 oz) full-fat coconut milk
1 cup diced tomatoes (fresh or canned)
1/2 cup vegetable broth
Salt and black pepper to taste
Fresh cilantro for garnish
For the Wild Rice:
1 cup wild rice
3 cups water or vegetable broth
Pinch of salt
Instructions:
Cook the wild rice | Rinse the wild rice under cold water. In a medium saucepan, bring 3 cups of water or vegetable broth to a boil. Add the rice and a pinch of salt. Reduce heat to low, cover, and simmer for 45-50 minutes, until the rice is tender and the grains split open. Drain any excess liquid and set aside.
