  • ½ cup shredded purple cabbage

  • ½ cup edamame (or cubed baked tofu)

  • ½ cup cooked quinoa or brown rice (optional base)

  • Toasted sesame seeds, for garnish

For the Sesame Lime Dressing:

  • 2 tablespoons tahini or toasted sesame paste

  • 1 tablespoon tamari or coconut aminos

  • 1 tablespoon fresh lime juice

  • 1 teaspoon maple syrup

  • 1 teaspoon grated ginger

  • 1 teaspoon toasted sesame oil

  • 2–3 tablespoons water (to thin)

Instructions:

  1. Prep the Veggies | Roast the beets until tender (about 25–30 minutes at 400°F / 200°C). Shred carrots and cabbage, and lightly steam or blanch edamame if using.

  2. Make the Dressing | In a small bowl, whisk together tahini, tamari, lime juice, maple syrup, ginger, and sesame oil. Add water gradually until the dressing reaches a creamy, pourable consistency.

  3. Assemble the Bowl | Arrange the quinoa or rice as a base (if using). Top with roasted beets, shredded carrots, corn, spinach, cabbage, and edamame or tofu in colorful sections.

  4. Drizzle & Garnish | Pour the sesame lime dressing over the bowl and sprinkle with toasted sesame seeds. Serve fresh or chilled.

  • Fresh cilantro or mint leaves

  • Avocado slices
