  • Juice of 1–2 lemons (adjust to taste)

  • 1 clove garlic, minced

  • Sea salt and cracked black pepper, to taste

Instructions:

  1. Prep the Quinoa Base | Cook quinoa according to package instructions (1 part quinoa to 2 parts water). Once fluffy, cool completely before combining.

  2. Chop the Rainbow | Dice the tomato, bell pepper, onion, and herbs finely for a uniform texture.

  3. Mix the Dressing | In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper until emulsified.

  4. Combine & Toss | Add the cooked quinoa, chopped vegetables, corn, and herbs to a large bowl. Pour over the dressing and toss gently to coat evenly.
