Ingredients:

Ingredients for Summer Rolls:

  • 8 rice paper wrappers

  • 1 cup red cabbage, thinly sliced

  • 1 cup carrots, julienned

  • 1 cup cucumber, julienned

  • 1 cup mango, sliced into thin strips

  • 1/4 cup fresh mint leaves

  • 1/4 cup fresh cilantro leaves

Ingredients for Mango-Tahini Dip:

  • 1/2 cup mango, diced

  • 2 tablespoons tahini

  • 1 tablespoon lime juice

  • 1 tablespoon tamari or coconut aminos

  • 1 teaspoon maple syrup

  • 1–2 tablespoons water (to adjust consistency)

Instructions:

  1. Prepare the Veggies and Herbs | Wash and prep all the vegetables and herbs. Set them aside in separate bowls for easy assembly.

  2. Soften the Rice Paper | Fill a large, shallow dish with warm water. Dip one rice paper wrapper into the water for 10–15 seconds, or until it becomes soft and pliable.

  3. Assemble the Rolls | Place the softened wrapper on a clean surface. Layer a small amount of red cabbage, carrots, cucumber, mango, mint, and cilantro near the center. Fold the bottom of the wrapper up over the filling, fold in the sides, and roll tightly. Repeat with the remaining wrappers and fillings.

  4. Make the Mango-Tahini Dip | In a blender, combine the mango, tahini, lime juice, tamari, maple syrup, and water. Blend until smooth and creamy, adding more water if needed for the desired consistency.

  5. Serve | Arrange the summer rolls on a platter with the Mango-Tahini Dip on the side. Garnish with extra herbs or sesame seeds if desired.
