WELLKHANA KITCHEN RECIPE
Ingredients:
1 block (14 oz) firm or extra-firm tofu, pressed and drained
1 tablespoon olive oil or avocado oil
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika (optional for depth)
1/4 teaspoon black salt (kala namak) or sea salt
1/8 teaspoon black pepper
1 small onion, finely chopped
2 cloves garlic, minced
2 cups baby spinach
2 tablespoons unsweetened plant-based milk (for creaminess)
Fresh lemon juice, to finish
Optional Add-ins:
Sliced cherry tomatoes
Diced bell peppers
Chopped herbs (cilantro, parsley, or chives)
Nutritional yeast for a cheesy flavor
Instructions:
1. Prep the Tofu | Using your hands or a fork, crumble the pressed tofu into bite-sized pieces resembling scrambled eggs.
2. Sauté Aromatics | In a skillet over medium heat, add oil, onion, and garlic. Sauté for 2–3 minutes until fragrant and slightly golden.
3. Add the Spices | Stir in turmeric, cumin, paprika, black salt, and black pepper. Toast the spices for 30 seconds to release their aroma.
4. Add the Tofu Add the crumbled tofu to the pan and toss well to coat evenly with the spice mixture. Sauté for 5–7 minutes, stirring occasionally until lightly golden.
5. Add Spinach & Creaminess Fold in the spinach and pour in the plant milk. Cook for another 2–3 minutes until the spinach wilts and the scramble becomes slightly creamy.
6. Finish with Freshness | Turn off the heat, squeeze in a bit of lemon juice, and sprinkle with fresh herbs if desired.
7. Serve & Savor | Serve warm with avocado slices, gluten-free toast, or as a filling for breakfast wraps.
