Ingredients:
For the Tofu Skewers:
1 block (14 oz) extra-firm tofu, pressed and cubed
2 tablespoons tamari or coconut aminos
1 tablespoon toasted sesame oil
1 tablespoon lime juice
1 tablespoon maple syrup
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon ground turmeric
½ teaspoon chili flakes (optional)

For the Spicy Almond Sauce:
¼ cup creamy almond butter
2 tablespoons tamari
1 tablespoon lime juice
1 tablespoon maple syrup or coconut nectar
1 teaspoon grated fresh ginger
½ teaspoon chili paste or sriracha (adjust to spice preference)
2–4 tablespoons warm water (to thin to desired consistency)
Optional Garnishes:
Fresh cilantro or Thai basil
Chopped peanuts or almonds
Lime wedges
Sesame seeds
Instructions:
1. Marinate the Tofu | In a bowl, whisk together tamari, sesame oil, lime juice, maple syrup, ginger, garlic, turmeric, and chili flakes. Add the tofu cubes and toss gently to coat. Let marinate for at least 30 minutes (or up to 4 hours) to absorb all the flavors.
2. Prepare the Sauce | In a small bowl, whisk together almond butter, tamari, lime juice, maple syrup, ginger, and chili paste. Gradually whisk in warm water until smooth and creamy. Adjust seasoning to taste.
3. Skewer and Grill | Thread marinated tofu onto skewers. Heat a grill pan or outdoor grill over medium heat. Cook tofu skewers for 3–4 minutes per side, until golden brown with light char marks.
4. Serve | Arrange tofu skewers on a platter. Drizzle with spicy almond sauce or serve it on the side for dipping. Garnish with cilantro, chopped nuts, and a squeeze of lime.
