WELLKHANA KITCHEN RECIPE

Ingredients:

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • 1 garlic clove

  • Salt and pepper, to taste

  • Water, as needed

Instructions:

  1. Prepare the Zucchini Noodles | Using a spiralizer, create zucchini noodles from the zucchinis. Set aside in a bowl. If you don’t have a spiralizer, you can also use a vegetable peeler to create thin strips of zucchini.

  2. Make the Hemp Pesto | In a food processor or blender, combine hemp seeds, basil leaves, nutritional yeast, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth, adding water a tablespoon at a time to reach your desired consistency. Taste and adjust seasoning as needed.

  3. Combine | Toss the zucchini noodles with the hemp pesto, making sure they are well-coated with the creamy pesto sauce.

  4. Serve | Divide the zucchini noodles into bowls and serve immediately. Garnish with extra hemp seeds, fresh basil, or a drizzle of olive oil if desired.
