1 cup chopped kale or baby spinach
1/4 cup finely chopped red onion
1/4 cup fresh parsley or mint leaves, chopped
1/4 cup pumpkin seeds or sunflower seeds (optional for crunch)
Instructions:
Make the Dressing | In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, garlic, sea salt, and pepper until emulsified.
