  • 1 cup fresh parsley, finely chopped

  • 1/4 cup fresh cilantro, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons red wine vinegar

  • 1/3 cup olive oil

  • 1/4 teaspoon red pepper flakes (optional)

  • Sea salt and black pepper to taste

Instructions:

  1. Prepare the Marinade | In a small bowl, whisk together olive oil, tamari, garlic, smoked paprika, black pepper, and sea salt.

  2. Marinate the Mushrooms | Brush the marinade generously over both sides of the mushroom caps. Let them sit for 15–20 minutes to absorb the flavors.

  3. Make the Chimichurri Sauce | In a bowl, mix parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes (if using), sea salt, and black pepper. Stir well and set aside.

  4. Grill the Mushrooms | Preheat a grill or grill pan over medium-high heat. Place the mushrooms on the grill, gill side down, and cook for 4–5 minutes. Flip and cook for another 4–5 minutes, until tender and slightly charred.
